Date & Coconut Bliss Balls (Gluten Free & Raw)
These no-bake chocolate hazelnut bliss balls are a simple, nourishing snack that’s perfect for lunchboxes, busy days, or when you want something sweet but balanced. They’re naturally gluten free, raw, and made with wholefood ingredients, no baking required.
Soft, chocolatey and lightly crunchy, they’re easy to make in one food processor and store well in the fridge or freezer, making them ideal for meal prep and grab-and-go snacks.
✨ What's in the jar
- ½ cup desiccated coconut
- ¼ cup cacao nibs
- ¼ cup hazelnuts
- 12 Medjool dates
If you don't have the jar, this is the dry ingredients you need.
Wet Ingredients
- 4 tablespoons melted coconut oil
- 2 tablespoons water
Method
- Take the dates from jar and remove the pits
- Add all ingredients to a food processor.
- Blend until the mixture comes together into a sticky, textured dough. You may need to stop and scrape down the sides once or twice.
- Roll into balls in whatever size suits you- smaller for lunchboxes, larger for a more filling snack.
- Refrigerate until firm, then enjoy.
Storage Tips
Store in an airtight container in the fridge for up to one week, or freeze for longer storage. They’re great straight from the fridge or popped into lunchboxes straight from the freezer.
