If you love freshly baked cookies but don’t love measuring 12 different ingredients, this gluten-free cookie mix in a jar is your new pantry hero. It’s the perfect rainy-day bake, thoughtful homemade gift, or emergency sweet treat, just add a few wet ingredients, chill, shape and bake. No fuss, no mess, just warm, spiced cookies in under 20 minutes.
These cookies come out gooey, soft and gently chewy, with cosy gingerbread vibes. Almond meal adds richness, coconut flour keeps them tender, and maple syrup gives natural sweetness without the sugar crash. Want chocolatey? Fruity? Festive? Add whatever mix-ins you love.
What’s in the Jar (or dry ingredients to buy)
- 140g almond meal
- 50g coconut flour
- 1 ½ tsp cinnamon
- 1 Tbsp ginger
- ¼ tsp nutmeg
- 1 ½ tsp baking powder
- ½ tsp salt
This blend is naturally gluten free and stores beautifully in an airtight jar.
Wet Ingredients to Add
- 50g melted butter
- 1 egg
- ½ cup maple syrupAly
- 1 tsp vanilla essence
Optional: choc chips, cranberries, goji berries, chopped nuts, cacao nibs
Method
- Tip the jar ingredients into a mixing bowl.
- Whisk melted butter, egg (or egg alternative), maple syrup and vanilla, then add to the dry mix.
- Stir until a dough forms, wrap in beeswax wrap or similar, and refrigerate for at least 2 hours — this helps with the gooey-soft texture.
- Preheat oven to 180°C and line a baking tray.
- Shape into cookies and add extra toppings if you wish.
- Bake for 10–15 minutes, until lightly golden on the edges but still soft in the centre.
- Cool slightly… then enjoy that gooey goodness.
Egg-Free Option
Swap the egg for:
1 flax or chia egg — mix 1 Tbsp ground flaxseed or chia seeds with 3 Tbsp water, let thicken 5 minutes
OR
3 Tbsp unsweetened apple sauce
This keeps the cookies soft, gooey and still holds them together.
Other Variations
Dairy-free? Use coconut oil instead of butter.
Add orange zest for a festive touch.
Dip cooled cookies in melted dark chocolate.
