Healthy Fruit Christmas Cake
A wholesome twist on the traditional festive favourite — naturally sweetened, flour-free, and bursting with real fruit and warm spices. Perfect for sharing during the holidays or enjoying with a cup of tea on a cozy afternoon.
Ingredients

Zest and juice of 1 orange

1 cup raisins

1 cup currants
-
1 cup cranberries

1 cup flaked almonds

3 cups almond meal

2 small ripe bananas (about 200g)

10 Medjool dates, pitted

2 tsp mixed spice
-
1 tsp cinnamon
-
½ tsp ground cloves
-
Pinch of salt

½ tsp vanilla extract
Method

Preheat oven to 160°C (fan-forced) and line a 20cm round cake tin with baking paper.

In a large bowl, combine orange zest and juice with raisins, currants, and cranberries. Let soak for at least 30 minutes to plump the fruit.

In a food processor, blend bananas, Medjool dates, vanilla extract, and spices until smooth.

Add the banana mixture, almond meal, and flaked almonds to the soaked fruit. Stir until well combined.

Spoon the batter into the prepared tin and smooth the top.

Bake for 60–70 minutes, or until firm and golden on top. Allow to cool completely before slicing.
Tip: Keeps well for up to a week in the fridge and freezes beautifully. Lovely served with Greek yoghurt or a drizzle of warm orange syrup.
